Recipe: Melon Gazpacho


Makes approximately 1 gallon of soup. 



5 medium melons, peeled and rough chopped

2 medium cucumbers, peeled and rough chopped

1 pepper, rough chopped

2 medium onions, peeled and rough chopped

2 cloves garlic, peeled and sliced

½ cup E.V.O.O.

3 tbsp champagne vinegar

Salt and pepper to taste



Chop produce and add seasonings. Marinate for up to 3 hours in the fridge. This will also chill the mixture before blending.

Add to fill blender. Blend until smooth. Will take multiple batches.


Pour into large serving bowl and check seasoning (vinegar, salt, and pepper to taste -- add more if desired). Will last up to three or four days in the fridge, and longer in the freezer.

Optional garnish: chopped melon, sliced cucumber, drizzled E.V.O.O.
